Demi made her World Rugby Sevens Series debut just a month shy of her 18th birthday when she played against Brazil, in Canada in May 2016. Australia finished with the bronze at that fifth leg of the international series, and Demi had jumpstarted her Rugby Sevens career.
Prior to her debut, Demi had been a member of the Australian age team to win gold at the Commonwealth Youth Games in Samoa in 2015.
Demi was a star during the 2018 World Sevens series scoring tries in three legs. That same year, she claimed a silver medal at the Gold Coast Commonwealth Games and capped off the year with a bronze medal at the Rugby Sevens World Cup in San Francisco.
While the 2019-2020 World Sevens series was interrupted by Covid, with only 5 of the 8 legs played, the Australian side medalled in three of the tournaments and finished off the season with 2 silvers and 1 bronze.
Hayes made her Olympic debut at Tokyo 2020, scoring twice in the opening game of the tournament, a 48-0 dismantling of Japan. She would go on to score her third of the tournament in the group stages, earning Australia a qualification to the quarter-finals of the competition. Two early tries from Fiji would be enough to deny Australia a consecutive medal placing at the event, losing 14-12.
Demi would end her Olympic debut on a high, scoring her fourth try of the tournament as Australia confirmed a 5th overall placing after beating the United States 17-7.
